Archipelago is back for Season 2 at Ikan Restaurant & Bar, The Westin Resort Nusa Dua, Bali, and the opening chapter is a three-night culinary swap that turns dinner into a cultural moment. From 2 to 4 April 2026, TAMU Restaurant and OSMO Bar Jakarta (both part of TOMA Group) take over the experience with a Betawi-forward menu and a cocktail program that’s built to match the spice. On the kitchen side, Chef Arief Rachman from TAMU brings Jakarta’s soulful staples to the coast with dishes that keep the heritage intact while pushing the presentation forward. Bold spices, comfort textures, and technique that respects tradition, but does not stay stuck in it. Then the bar steps in. Azzabella “Bella” Putri from OSMO leads the cocktail takeover, known for the “Bastardized Classics” and a modern mixology edge. Think familiar shapes, flipped with local cues and sharper technique, designed to cut through richer flavors and keep the night moving.
