Jelajah Rasa Takes Indonesian Flavours on a Nine-Course Journey at Double Ikat

Dinner is getting a little more adventurous in Uluwatu. At Double Ikat, Renaissance Bali Uluwatu Resort & Spa, a new dining experience called Jelajah Rasa invites guests to forget about choosing from a menu and instead put the evening entirely in the hands of the chef.
Inspired by the Japanese omakase philosophy, Jelajah Rasa is a nine-course culinary journey that puts Indonesian gastronomy front and centre. Executive Chef Wisnu Adiyatma takes seasonal produce, premium local ingredients and modern techniques, reworking familiar elements of Indonesian cuisine into something contemporary and unexpected.
And because no good culinary adventure should reveal everything upfront, each evening begins with a little mystery. Before the first course arrives, guests are presented with a signature Black Box, revealing the evening’s hero ingredients in their most recognisable forms. Think roots, leaves, spices and locally sourced elements that become the starting point for the story.
From there, the ingredients make their way through nine courses, evolving from their raw origins into refined plates. It is part dinner, part performance, with the action unfolding inside Double Ikat’s Kitchen Studio, an open chef-led space where guests can watch the fire, techniques and finishing touches happen right in front of them.

Chef Wisnu describes Jelajah Rasa as an invitation to rediscover Indonesia from a new perspective, using ingredients as the beginning of a story before revealing how technique, creativity and heritage shape their final expression. A curated beverage experience accompanies the progression, adding another layer to the journey while celebrating Indonesia’s vibrant drink culture.

The experience is designed to feel intimate and interactive rather than simply being another degustation dinner. With limited seating inside the Kitchen Studio, guests get a front-row view of the culinary action while the chef takes them through an evolving menu that connects Indonesian flavours with the destination.
Available daily from 6:30 PM onwards, Jelajah Rasa is priced at IDR 1,100,000++ per person, with advance reservations required. For those looking to shake up the usual dinner plans, this is one Uluwatu evening where the menu comes with a mystery, the chef calls the shots, and Indonesian flavours take centre stage.
