SKAI Bar & Grill and SKOOL Kitchen Are Bringing a Sunset Cocktail Takeover to Legian

There’s something about Bali nights that just hit differently when good cocktails, beachside bites, and great company come together. This May, SKAI Bar & Grill is turning up the flavour with Mixology Takeover Vol. 3, teaming up with Jakarta’s buzzy SKOOL Kitchen for a one-night-only collaboration that promises easy drinks, playful flavours, and sunset energy by the beach.
Happening on Saturday, 23 May 2026, from 6PM to 10PM, the takeover will feature bartender Deva Diantara, bringing SKOOL Kitchen’s signature cool-kid charm to the shores of Legian. Fresh off SKOOL Kitchen’s recognition in Tatler’s Best 20 Restaurants in Indonesia, Deva is set to serve cocktails that are approachable yet unexpected, combining technique with flavours that feel familiar in the best way possible.
One of the highlights of the night is Deva’s use of the shrub technique, an old-school method of blending fruit, sugar, and vinegar to create cocktails with bright acidity and layered depth. But this isn’t your typical mixology flex. Instead, the menu leans into local ingredients with a fresh perspective, including the underrated mengkudu, or noni fruit, known for its naturally bitter and punchy profile. Somehow, Deva turns it into something crisp, refreshing, and seriously drinkable.

Then there’s Tomat, arguably the cocktail everyone will be talking about. Inspired by the classic Bloody Mary, the drink keeps the rich tomato flavour people love while stripping away most of the heaviness and colour, making it lighter, cleaner, and dangerously easy to sip by the beach.
Of course, cocktails this fun deserve food to match. Guests can pair the drinks with some of SKAI’s crowd favourites, from the juicy Smoked Beef Patty to the Wood-Fired Chicken and Grilled Halloumi.
