Two Chefs, Two Frequencies: Adriana Cocina & Bar Sets the Table for a Latin American Takeover

Two Chefs, Two Frequencies: Adriana Cocina & Bar Sets the Table for a Latin American Takeover

Some dinners are built around a menu. Others are built around the people behind it. On 19 and 20 June 2026, Adriana Cocina & Bar brings together two chefs with entirely different journeys for a collaborative dinner that feels less like a formal culinary showcase and more like a meeting of personalities, experiences, and instincts. For two nights only, Chef Gerardo Ramos and Chef Matias Mardones will take over the kitchen with an eight-course dinner rooted in Latin American flavors, sharp execution, and the kind of energy that only happens when contrasting styles meet at the same table.

Chef Gerardo Ramos represents discipline shaped over decades inside professional kitchens across Mexico, the United States, and Indonesia. His career was built through experience rather than shortcuts, moving through the structure of restaurant operations, opening concepts, leading teams, and mastering the mechanics of consistency under pressure. His cooking reflects that same mentality. Grounded in authentic Mexican and Latin American traditions, his dishes focus on clarity, precision, and respect for ingredients without trying too hard to impress. There is confidence in restraint, and his approach proves that bold flavors often speak loudest when left uncomplicated.

Across the kitchen stands Chef Matias Mardones, whose path into cooking started somewhere far more personal. Before professional kitchens and international hotel restaurants, there was simply family cooking — learning through observation, repetition, and instinct while watching his mother and grandmother prepare meals at home. That early relationship with food still shapes how he cooks today. His career later carried him through Chile, Hong Kong, Manila, Macau, and Korea, where he adapted to fast-paced kitchens, cultural differences, and the unspoken language of service. The result is a style that feels dynamic, layered, and emotionally driven, with dishes designed to create an immediate reaction from the first bite.

At Adriana Cocina & Bar, those two worlds meet without competing against each other. Instead, the dinner explores how structure and instinct can coexist on the same menu. Chef Gerardo brings control, preparation, and technical discipline, while Chef Matias introduces movement, adaptability, and bold flavor layering. Together, they create a dining experience that feels intentional rather than overly conceptual, allowing ingredients, texture, and balance to take center stage throughout the eight-course journey.

The setting itself adds to the atmosphere. Located on the eighth floor of Samasta Lifestyle Village in Jimbaran, Adriana carries the kind of rooftop energy that naturally shifts from elegant dinner to lively late-night conversations as the evening unfolds. Open, vibrant, and social without losing its intimacy, the venue creates the perfect backdrop for a collaboration designed around flow, interaction, and shared experiences around the table.

To elevate the evening further, guests can opt for beverage pairings curated to complement the flavors of each course, while cigar and tequila selections add a smoky finishing touch for those wanting something more indulgent. With seating intentionally limited to preserve the quality and rhythm of service, the collaboration promises a dining experience that feels personal despite the scale of talent behind it.

The eight-course experience is priced at IDR 1,100,000 net per person, with optional beverage pairing available at IDR 550,000 net and cigar and tequila pairing at IDR 450,000 net per set.
