Takumi Bali Takes Over Hamabe for Two Nights of Japanese Omakase

Japanese dining gets a special two-night upgrade as Takumi Bali heads to Hamabe at The Westin Resort Nusa Dua, Bali for an exclusive omakase takeover on 16 and 17 October 2026.
For the occasion, Chef Daijiro Horikoshi, the chef behind the intimate Seminyak favourite, will bring his contemporary approach to Japanese cuisine to Hamabe’s counter, serving a specially curated 16-course omakase that puts seasonality, precision and premium ingredients in the spotlight. From Ebi Kimizushi and Hisui Nasu with ume sauce to Hokkaido Hotate paired with Bedugul strawberry, matcha and Balinese sea salt, the menu moves between Japanese classics and unexpected local touches.

The experience continues with a selection of indulgent courses, including Maguro Akami and Toro with marinated egg yolk, Foie Gras with miso and pickled grape, Ebi Katsu served in house-made shokupan, and Aburi Wagyu Nigiri finished with truffle shiokombu, ikura, slow-cooked egg yolk and green tea dashi. To close, Takumi-style Shirokuma brings together matcha, tofu mochi, seasonal fruits and azuki, followed by Nama Chocolate and hot sencha.
But this is more than a dinner. Dede, Head Bartender of The Bar by Takumi, has created a bespoke four-cocktail pairing designed to flow alongside the 16-course menu. Served in tasting-sized portions, each cocktail is matched to a sequence of courses, playing with complementary flavours, textures and aromas for a more immersive dining experience.

With just 16 seats available each evening, the takeover promises an intimate night of Japanese craftsmanship, cocktails and serious culinary theatre. The omakase is priced at IDR 1,300,000++ per person for food only, or IDR 1,400,000++ with the cocktail pairing.
